Weight Watchers Cauliflower Fromage recipe
Makes 4 servings

Ingredients
1 medium cauliflower
1/4 cup dry breadcrumbs
1 clove garlic, crushed
1/4 cup butter
1/2 cup shredded Swiss or Cheddar cheese
1 pinch nutmeg
1 pinch pepper

Preparation
1. Preheat the oven to 400 degrees F.
2. Butter a shallow baking dish.
3. Break the cauliflower into bite-size pieces and cook for about 10 minutes (until still slightly firm).
4. Drain and rinse the cauliflower under cold water.
5. Prepare the sauce by melting the butter in a small saucepan.
6. Add the garlic and cook over medium-low heat for about 2 minutes, stirring often.
7. Stir in the breadcrumbs, nutmeg and pepper.
8. Stir constantly for about 3 minutes (until the mixture thickens).
9. Spoon over the cauliflower.
10. Sprinkle with cheese.
11. Bake for about 15 minutes (or until the cheese is melted and bubbly).

Ingredients
1/2 cup brown rice
3/4 cup lentils
3/4 cup chopped onion
3 cups chicken or vegetable broth
1/4 teaspoon garlic powder
1 teaspoon Italian seasoning
1 cup grated Cheddar cheese

Preparation
1. Preheat the oven to 300 degrees F.
2. In a baking dish, mix all ingredients (except the Cheddar cheese.
3. Cover with foil and bake for about 1- 1 1/4 hour.
4. Remove the foil, add the Cheddar cheese and bake for about 20 more minutes.

One serving is approximately 80 grams.
