Weight Watchers Diabetic Blueberry Scones recipe
Makes 8 servings

Ingredients
1 1/2 cups fresh blueberries, picked over and rinsed
1 1/4 cups all-purpose flour
3/4 cup whole wheat flour
1 tablespoon baking powder
3 tablespoons Splenda (plus more for sprinkling on top if desired)
4 tablespoons heart-healthy margarine
1/3 cup fat-free evaporated milk
1/2 cup egg whites, lightly beaten
1 tablespoon egg white (optional)
1/4 teaspoon nutmeg, rounded
1/2 teaspoon salt, scant
1 teaspoon lemon zest, grated

Preparation
1. Adjust the rack to center of the oven, and heat to 400 degrees F.
2. In a large bowl, sift together the two types of flour, 3 tablespoons Splenda, baking powder, and salt. Using a pastry blender or two knives, cut in the margarine until the largest pieces are the size of small peas.
3. Stir in the blueberries and lemon zest.
4. Using a fork, whisk together the milk and egg white in a liquid measuring cup.
5. Make a well in the center of the dry ingredients and pour in the cream mixture.
6. Stir lightly with a fork just until the dough in lightly mixed.
7. Turn out onto a lightly floured surface, and press/pat into an 8-10 circle.
8. Using a sharp knife, cut into eight wedges.
9. Transfer to the baking sheet lightly sprayed with cooking spray.
10. Brush the top with some egg white and sprinkle with Splenda if desired.
11. Bake for about 25-30 minutes (until golden brown).
12. Transfer the scones from the baking sheet to wire racks to cool.

There are times when I would like to eat something cooked, yet I don’t feel like cooking. Luckily, there is the microwave - I only recently discovered that it’s not only for reheating leftovers, but that it can help you prepare “normal” dishes that are quite tasty!

This rosemary potatoes recipe is ready in only 20 minutes and has a great flavor. You can have it as a side dish with chicken or steak, or just eat the potatoes by themselves (like I sometimes do!).

Ingredients
1 1/2 lbs red potatoes (about 4 cups), quartered
2 cloves garlic, smashed
1 teaspoon dried rosemary
1 tablespoon butter
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Preparation
1. Place the butter and garlic in an 8-inch square baking dish.
2. Microwave at medium-high (70%) for about 45 seconds (or until the butter melts).
3. Add the potatoes, rosemary, salt and black pepper, toss well.
4. Cover and microwave at high for about 15 minutes (or until the potatoes are tender).

One serving is approximately 175 grams.

Tourtiere tarts are French Canadian meat pies that are traditionally served on Christmas Eve.

You can freeze these individually on cookie sheets and then vacuum seal, or store them in a plastic container.

Ingredients
1 lb ground beef
1/2 lb ground pork
1 teaspoon poultry seasoning or sage
1/2 cup previously cooked and mashed potatoes
2 garlic cloves, finely minced
1 small onion, finely diced
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup water

Preparation
1. Combine first 8 ingredients in large saucepan. Simmer.
2. Bring to a boil, then simmer for about 15 minutes, stirring to prevent sticking.
3. Remove from heat and add mashed potatoes. Mixture should be moist and thick. Cool completely.
4. Line muffin tins with tart shells. Spoon meat mixture to fill.
5. Bake at 400 degrees F until browned.
6. To reheat from freezer, put in oven or toaster oven for about 10 to 20 minutes at 350 degrees F.
