Weight Watchers Delicious Hummus recipe
Makes 7 servings

Ingredients
2 (10 ounce) cans chickpeas, drained and rinsed
1/4 cup toasted sesame seeds
1/4 cup tahini
1/2 cup fresh parsley, chopped (or 1/4 cup dried)
2 cloves garlic, minced
1 medium onion, chopped
2 tablespoons fresh lemon juice
1-2 tablespoon tamari
2 tablespoons cider vinegar
1 tablespoon curry powder (optional)
salt and pepper, to taste

Preparation
1. In a food processor, puree the garlic, onion, lemon juice, tamari, vinegar and curry powder (if using) until the mixture is smooth.
2. Add half of the tahini and half of the chickpeas and blend until smooth.
3. Add the remaining tahini and chickpeas and blend coarsely (so that the mixture is chunky).
4. Toast the sesame seeds in a heavy skillet over medium heat until they are golden, shaking the pan or stirring constantly to avoid burning.
5. Add the toasted sesame seeds and parsley to the hummus and stir to blend.
6. Add salt and pepper to taste.
7. Serve as a sandwich filling, or as a dip with toasted pita wedges or fresh vegetables.

Here’s a very good low-fat dip that’s only 2 points per serving, but still tastes creamy and rich. It goes great with pita chips, savory thin crackers, tortilla chips or veggies (especially celery)!

Makes 6 servings

Ingredients
1/2 cup chopped canned artichoke heart
1/2 cup frozen spinach, thawed, squeezed and dried
3 scallions, diced
1 tablespoon sun-dried tomatoes, finely chopped
1 teaspoon garlic powder
1 tablespoon asiago cheese, shredded
1 (8 ounce) container reduced-fat sour cream
1 cup fat-free mayonnaise (or less if you want the sour cream flavor to be more prominent)

Preparation
1. Preheat the oven to 350 degrees F.
2. Combine all the ingredients in an oven-safe casserole dish, sprinkling cheese on top.
3. Bake for about 10-15 minutes (until heated through and the cheese is bubbling).

One serving is approximately 115 grams.

Up until a few years ago, I wouldn’t eat anything that had garlic in it. Now, I’m such a big garlic fan that I use it in almost every dish that I prepare!

Here’s a very “garlicky” spread that you can serve on anything from bread to crackers and bagels. If you want a stronger garlic flavor, roast the garlic cloves. Also, adding a little freshly ground pepper seems to increase the flavors even more.

Ingredients
1-2 cloves garlic
4 ounces Feta cheese, crumbled
8 ounces cottage cheese
3 ounces green onion, chopped
1 teaspoon dried basil
freshly ground black pepper (optional, to taste)

Preparation
1. In a food processor, process the garlic, green onion, basil; process until finely chopped.
2. Add the cheeses and pepper (optional); pulse until blended but still chunky.
3. Chill well before serving.
4. Serve on bagels, crackers or plain bread.

One serving is approximately 45 grams.

1 1/2 cups basil
2-5 garlic cloves
1/4 cup grated parmesan cheese
1/4 cup pine nuts
1/8 cup olive oil
1/8 cup lemon juice

Preparation
1. Mix all the ingredients together in a food processor (except the oil and lemon juice).
2. Once everything is mixed well, drizzle with lemon and oil.
3. Mix well until blended.
4. Serve on pasta (or on any other dish that needs a pick-me-up).
