Weight Watchers Chili recipe
Makes 8 servings

Ingredients
2 lbs ground beef
2 cloves garlic, mashed
3/4 cup chopped green pepper
1 (4 ounce) can mushrooms (drained)
1 (6 ounce) can tomato paste
1 onion, chopped
1 quart water
1 teaspoon Worcestershire sauce
3 bay leaves
1 teaspoon cumin
1 teaspoon cinnamon
2 tablespoons chili powder
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon allspice
1/2 teaspoon red pepper

Preparation
1. In a large skillet, brown the meat, draining off the fat.
2. Add the remaining ingredients, bring to a boil and simmer for about 3 hours.

One serving is approximately 300 grams.

Weight Watchers Low Fat Hamburgers recipe
Makes 4 servings

Ingredients
3/4 lb lean ground beef meat
4 hamburger buns
1 tablespoon pickle relish
1 teaspoon dijon-style mustard
2 green onion, chopped
1/4 cup oat bran
1/4 teaspoon garlic powder
2 tablespoons catsup
lettuce
alfalfa sprouts (optional)
salt and pepper (to taste)

Preparation
1. In a medium bowl, combine the beef, oat bran, onions, relish, mustard, garlic powder and catsup.
2. Mix together throughly.
3. Shape into 4 patties.
4. Broil the patties for about 7-10 minutes on each side (or cook them on the grill).
5. Slice the hamburger buns in half and toast lightly.
6. Top with the meat patties, lettuce and alfalfa sprouts (optional).
7. Season with salt and pepper to taste.

I know it’s not that healthy, but I enjoy eating burgers once in a while. They’re my favorite comfort food (besides pasta, of course).

I tried this burger recipe the other day, and I loved it. The salsa really gives it a special flavor…

Weight Watchers Double Salsa Burgers recipe
Makes 6 servings

Ingredients
1 1/2 lbs lean ground beef
1 large tomato, seeded and finely chopped
1/4 cup finely chopped red onions
1 garlic clove, minced
1/2 cup finely chopped green sweet peppers
2 finely chopped seeded jalapeno peppers
2 cups shredded lettuce
1 tablespoon snipped cilantro
1/3 cup finely shredded cheddar cheese
1/4 teaspoon salt
1/4 cup sour cream and/or guacamole (to serve)

Preparation
1. For the salsa: In a bowl, combine the tomato, garlic, onion, green peppers, jalapeno peppers, cilantro, and salt. Set aside 2 tablespoons of the salsa. Cover and chill the remaining salsa until serving time.
2. In another bowl, combine the ground beef and the 2 tablespoons of reserved salsa; mix well.
3. Shape the mixture into six 1/2-inch-thick oval patties.
4. Grill the patties on an uncovered grill directly over medium coals for about 13-15 minutes (or until an instant-read thermometer inserted in side of patty registers 160 degrees F), turning the patties once halfway through grilling time.
5. Arrange the shredded lettuce on individual plates. Top with the burgers, the remaining salsa, and the cheddar cheese.
6. Serve with sour cream and/or guacamole.

A very easy to prepare and extremely flavorful main dish recipe!

The V-8 vegetable juice gives this dish a great taste, so use it (instead of plain tomato juice) if you have it on hand!

Weight Watchers Ground Beef Noodles in Sour Cream recipe
Makes 6 servings

Ingredients
3 cups noodles, uncooked
1 lb ground beef
1 (6 ounce) can mushroom stems and pieces
1 cup onions, chopped
2 tablespoons butter, melted
1 cup sour cream
2 teaspoons Worcestershire sauce
3 cups V-8 vegetable juice (or tomato juice)
2 teaspoons salt
1 dash pepper
1 teaspoon celery salt (optional)

Preparation
1. In a large frying pan or Dutch oven, saute the onions in butter until tender, then add meat and brown lightly.
2. Place the noodles in a layer over meat.
3. Combine the tomato juice with the seasonings, and pour over noodles.
4. Bring to a boil, then cover.
5. Simmer over low heat for 30 minutes (or until the noodles are tender).
6. Stir in the sour cream and mushrooms and bring to a boil.
7. Serve hot.

This is a great comfort food for the cold season. This is a very simple recipe, yet the stuffed peppers have a very nice flavor and taste great with a side dish of mashed potatoes and gravy.

As a variation, you can try putting in rice instead of corn.

Weight Watchers Crock Pot Stuffed Peppers recipe
Makes 3 servings

Ingredients
4 green bell peppers
1 tablespoon Worcestershire sauce
1/2 lb ground sirloin
1/2 cup chopped onions
1 tablespoon mustard
1 teaspoon salt
2 (10 1/2 ounce) cans tomato soup
1 (15 1/2 ounce) can corn
fresh ground pepper

Preparation
1. Remove the tops of peppers and remove seeds and core.
2. Arrange in crock pot so that they’re standing upright.
3. In mixing bowl, combine sirloin, onion, salt, corn, 1 can of soup.
4. Spoon mixture into peppers, pressing down to fill completely (may overload a bit at the tops).
5. Combine the other can of soup with Worcestershire and mustard.
6. Spoon mixture over the peppers.
7. Add pepper to taste.
8. Cover and cook on low for 8-9 hours.
