Here’s a simple and quick healthy breakfast of scrambled eggs over fresh sliced tomatoes and basil. If you want an even healthier version, go for just egg whites.

Weight Watchers Scrambled Eggs over Fresh Sliced Tomatoes and Basil recipe
Makes 1 serving

Ingredients
2 eggs
1 tomato
4 basil leaves
salt and pepper

Preparation
1. Beat the eggs slightly with fork, adding 2 minced basil leaves, pepper, and a 1/2 teaspoon water.
2. Heat the pan, spray with cooking spray and add the mixture.
3. Cook until the eggs get a creamy consistency, stirring and scraping from the bottom of the pan.
4. Slice and plate the tomato top with the scrambled eggs, garnish with basil and season with salt and pepper.

One serving is approximately 233 grams.

Weight Watchers Five-Spices Chicken Wings recipe
Makes 35 servings

Ingredients
3 lbs chicken wings
2 garlic cloves, finely minced
2 tablespoons soy sauce
3 tablespoons liquid honey
2 tablespoons rice vinegar
2 tablespoons hoisin sauce
1 tablespoon vegetable oil
1 tablespoon five-spice powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Preparation
1. Cut the tips of chicken wings and throw them away.
2. Cut the chicken wings in two at the joints.
3. In a big bowl, mix the remaining ingredients (except the honey). Add chicken wings and flip to coat well.
4. Cover and let marinate for about 2 hours (or overnight) in the fridge.
5. Put the barbecue to medium heat.
6. Place the chicken wings on a greased grill or in a grill basket. Close the cover of barbecue and cook for about 25 minutes (or until the chicken wings are crispy and the juice runs clear when poking with a fork), flipping them a few times. 7. Baste the chicken wings with honey, close the cover of barbecue and keep cooking for another 3 minutes (flipping them one time).

One serving is approximately 43 grams.

Weight Watchers Herbed Zucchini Soup recipe
Makes 4 servings

Ingredients
1 1/2 lbs (about 3 medium) zucchini, cut into 1-inch pieces
3 cups chicken broth
3/4 cup (3 oz) shredded cheddar cheese
1 tablespoon chopped fresh tarragon or dill
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

Preparation
1. Place the zucchini, chicken broth and tarragon (or dill) in a medium saucepan; bring to a boil over high heat.
2. Reduce to a simmer and cook, uncovered, for about 7-10 minutes (until the zucchini is tender).
3. Puree in a blender (in batches, if necessary) until smooth.
4. Return the soup to the pan and heat over medium-high heat, slowly stirring in the cheese until it is incorporated.
5. Remove from the heat and season with salt and pepper. Serve hot or chilled.

One serving is approximately 375 grams.

Weight Watchers Greek Mushroom Salad recipe
Makes 6 servings

Ingredients
1/2 lb mushrooms
1 medium tomato, diced
3 garlic cloves, finely chopped
1 tablespoon olive oil
1 teaspoon basil or marjoram
1 tablespoon fresh parsley or fresh coriander, chopped
3 tablespoons lemon juice
1 pinch salt
1 pinch fresh pepper, ground
1/3 cup water

Preparation
1. In a frying pan, heat the oil on low heat and gently fry the mushrooms for about 2-3 minutes (do not overcook!).
2. Sprinkle in the garlic and basil, then toss the mixture for a minute or two so that mushrooms are well coated.
3. Add the diced tomato, lemon juice, salt, pepper and water.
4. Stir together and cook until the tomato softens.
5. Remove from the heat and let cool at room temperature for about 1-2 hours (so the flavors blend together).
6. Garnish with chopped herbs.

One serving is approximately 90 grams.
