Here’s a great chicken salad recipe for you. The apples, grapes and chicken blend together perfectly and give this salad a wonderful flavor!

If you’re making this in advance, add in the apple just before serving.

Weight Watchers Fruity Chicken Salad recipe
Makes 6 servings

Ingredients
4-5 cups cooked chicken (shredded or finely chopped, preferably chicken breast)
1/4 cup finely chopped red onions
1 stalk celery, finely diced
1 small apple (cored and finely chopped)
1/3 cup toasted chopped almonds (coarsley chopped)
1/2 cup red seedless grapes (sliced into quarters or halves)
2/3 cup dark raisins
1/2 cup plain yogurt (or use sour cream)
1/2 cup mayonnaise
2-3 teaspoons honey (or to taste)
black pepper
1/2-1 teaspoon curry powder (optional)

Preparation
1. In a large bowl combine the cooked chicken with celery, onion, raisins, grapes, chopped apple and almonds; toss to combine.
2. In a bowl combine the mayonnaise with yogurt and honey until combined (if you are adding in the curry powder then combine with the mayonnaise mixture) add to the chicken mixture; toss to combine well, then season with black pepper to taste.

I think no Christmas should be without gingerbread cookies. Here’s one of the best gingerbread cookie recipes I have found. They are really chewy and good, and wonderful smelling! The kids (and everyone else too) will love them!

If you want the cookies to turn out crispy, roll them out very thin. Thicker cookies are softer. If the dough is too sticky, chilling should probably help (you need to let the dough rest at least two hours!).

Weight Watchers Gingerbread Cookies recipe
Makes 24 cookies

Ingredients
3 cups all-purpose flour
1 large egg
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
6 tablespoons unsalted butter
3/4 cup dark brown sugar
1/2 cup molasses
1/4 teaspoon salt
1 tablespoon ground ginger
1 3/4 teaspoons ground cinnamon
1/4 teaspoon ground cloves
2 teaspoons vanilla
1 teaspoon finely grated lemon zest (optional)

Preparation
1. In a small bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.
2. In a large bowl beat butter, brown sugar, and egg on medium speed until well blended.
3. Add molasses, vanilla, and lemon zest and continue to mix until well blended.
4. Gradually stir in dry ingredients until blended and smooth.
5. Divide dough in half and wrap each half in plastic and let stand at room temperature for at least 2 hours or up to 8 hours.
6. Preheat oven to 375°.
7. Grease or line cookie sheets with parchment paper.
8. Place 1 portion of the dough on a lightly floured surface.
9. Sprinkle flour over dough and rolling pin.
10. Roll dough to a scant 1/4-inch thick. Use additional flour to avoid sticking.
11. Cut out cookies with ginger bread man cutter.
12. Space cookies 1 1/2-inches apart.
13. Bake 1 sheet at a time for 7-10 minutes (the lower time will give you softer cookies).
14. Remove cookie sheet from oven and allow the cookies to stand until the cookies are firm enough to move to a wire rack.
15. After cookies are cool, you may decorate them any way you like.

1 (46 fluid ounce) can V8 vegetable juice
1 dash Tabasco sauce
1 dash worcestershire sauce
4 cloves

1. Heat at a low simmer, all ingredients for 1 hour or use a crock pot).
2. Serve hot in tea cups.

Here’s a great way to make peppers - these not only look like Christmas, but also taste like Christmas!

You can use fresh herbs if you like. Make sure not to overcook the peppers!

Makes 6 servings

Ingredients
4 medium green bell peppers, cored and cut into strips
4 medium red bell peppers, cored and cut into strips
1 medium yellow onion, peeled and sliced
3 garlic cloves, sliced (minced)
3 tablespoons olive oil
salt & freshly ground black pepper, to taste
1/4 cup fresh parsley, chopped
1 teaspoon dried oregano (not powder)
1 teaspoon dried rosemary (not powder)
1/3 cup dry red wine

Preparation
1. Heat oil in large frying pan and add the onion and garlic. Saute a few minutes until the onion begins to collapse.
2. Add the bell peppers, oregano, and rosemary, and saute 5 minutes.
3. Add the wine and continue cooking until the peppers are tender.
4. Add salt and pepper to taste and parsley and toss together.

Ingredients
1 lb ground beef
1/2 lb ground pork
1 teaspoon poultry seasoning or sage
1/2 cup previously cooked and mashed potatoes
2 garlic cloves, finely minced
1 small onion, finely diced
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup water

Preparation
1. Combine first 8 ingredients in large saucepan. Simmer.
2. Bring to a boil, then simmer for about 15 minutes, stirring to prevent sticking.
3. Remove from heat and add mashed potatoes. Mixture should be moist and thick. Cool completely.
4. Line muffin tins with tart shells. Spoon meat mixture to fill.
5. Bake at 400 degrees F until browned.
6. To reheat from freezer, put in oven or toaster oven for about 10 to 20 minutes at 350 degrees F.
