Weight Watchers Orange-Scented Cinnamon Rolls recipe
Makes 12 servings

Ingredients
2 1/2 cups flour
1 1/2 teaspoons yeast
1/2 teaspoon salt
1/3 cup sugar
2 tablespoons unsalted butter, plus more for greasing bowl and pan
1 egg
1/2 cup skim milk, plus more as needed
1/2 cup sugar
2 teaspoons ground cinnamon
2 tablespoons minced orange zest
raisins (optional)
chopped nuts (optional)

Preparation
1. Combine flour, yeast, salt and sugar in container of food processor fitted with steel blade and process 5 seconds.
2. Add 2 tablespoons butter and egg, and pulse a few times, until well combined.
3. With machine running, drizzle most of milk through feed tube.
4. Process just until a dough ball forms.
5. If necessary, add more milk, 1 teaspoon at a time.
6. Knead by hand on a lightly floured surface a minute or two longer, adding more flour or milk as necessary, until dough is smooth and elastic.
7. Butter a bowl and place dough in it, turning to coat.
8. Cover and let rise in warm, draft-free area, about 2 hours.
9. Roll out dough into a 1/2-inch thick rectangle.
10. Brush liberally with melted butter, then spread with a mixture of sugar, cinnamon and orange zest.
11. If desired, add raisins or chopped nuts.
12. Roll up jelly-roll style, then cut into 1- 1 1/2-inch thick slices.
13. Place rolls in a buttered round pan.
14. Place one or two rolls in middle, and work the others out around it, so that all are touching.
15. Cover and let rise until puffy, about 1 hour.
16. While rolls are rising, boil together 1/2 cup sugar and 1/2 cup orange juice until thickened.
17. Just before baking, brush slices lightly with butter, then liberally with this mixture.
18. Bake in a preheated 400-degreee oven until nicely browned, 20- 30 minutes.

Here’s a great thrifty vegetable soup that’s very low in fat. It can be made with canned or frozen green beans and potatoes, but it’s much much better if made with fresh green beans and beautiful squeaky new potatoes.

Weight Watchers Green Bean and Potato Soup recipe
Makes 6 servings

Ingredients
1 lb green beans, ends removed and broken into bite size pieces
1 lb new potatoes, scrubbed, skins left on and quartered
1 medium onion, sliced into thin strips
1/2 teaspoon thyme (optional)
milk
salt and pepper

Preparation
1. In a large saucepan add green beans, potatoes, onion and thyme if desired.
2. Add enough water to cover and bring to a boil.
3. Reduce heat and simmer until vegetables are tender add just enough milk to turn it milky, heat until milk warms. Do not boil.
4. Serve in bowls GENEROUSLY sprinkled with salt and pepper.

Weight Watchers Green Onion Pancakes recipe
Makes 4 servings

Ingredients
1 large egg
2 teaspoons sesame oil
8 egg roll wraps
4 teaspoons sesame seeds
1 cup finely chopped green onions (, white and green parts)
2 tablespoons peanut oil or vegetable oil
soy sauce, to taste

Preparation
1. Beat the egg and sesame oil together.
2. Brush one side of one egg roll wrapper with the egg mixture.
3. Sprinkle with 1/4 green onions and 1 tsp sesame seeds.
4. Brush one side of another egg roll wrapper and press wet side on top of the other one and press down to seal.
5. Repeat for other 3 pancakes.
6. Heat 1 tbsp oil on medium high heat.
7. Fry each side of each pancake for about 2 minutes til golden brown.
8. Add more heat as necessary.
9. Cut each into 6 pieces.
10. Can serve with soy sauce.

Preparation
1. Arrange 8 corn tortillas in a stack and cut into 6 equal wedges.
2. Pour about 1/2 inch salad oil in a deep 2 or 3-quart pan and set on medium-high to high heat.
3. When oil is hot enough to make a piece of tortilla sizzle, add tortilla pieces, a handful at a time, and stir to separate.
4. Cook until crisp (1 to 1-1/2 minutes); lift from oil with slotted spoon and drain on paper towels.

Ingredients
1 lb confectioners’ sugar
3 teaspoons butter or margarine, softened
2-3 teaspoons peppermint extract
1/2 teaspoon vanilla extract
1/4 cup evaporated milk
2 (12 ounce) cups semi-sweet chocolate chips
2 teaspoons shortening

Preparation
1. In a bowl, combine first four ingredients.
2. Add milk and mix well.
3. Roll into 1-inch balls and place on a waxed paper-lined cookie sheet.
4. Chill for 20 minutes.
5. Flatten with a glass to 1/4″.
6. Chill for 30 minutes.
7. In a double boiler or microwave-safe bowl, melt chocolate chips and shortening.
8. Dip patties and place on waxed paper to harden.
