Weight Watchers Graham Crackers recipe
Makes 24 servings

Ingredients
1/2 cup shortening
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 cups whole-wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup milk

Preparation
1. In a medium bowl, cream together the shortening and brown sugar.
2. Stir in the vanilla.
3. Combine the whole wheat flour, all purpose flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the milk.
4. Cover and chill dough until firm.
5. Preheat oven to 350 degrees F.
6. Grease cookie sheets.
7. On a lightly floured surface, roll the dough out to 0.125 inch thickness.
8. Cut into rectangles or circles.
9. Place 1/2 inch apart onto the prepared cookie sheets.
10. Bake for 10-12 minutes in the preheated oven, or until crisp.
11. Edges will be golden brown.
12. Remove from baking sheet to cool on wire racks.

Gazpacho soup is a cold, Spanish soup that’s very popular during the summer. It is almost like a liquid salad.

Weight Watchers Gazpacho Soup recipe
Makes 6 servings

Ingredients
2 large tomatoes
1 large green bell pepper
1 garlic clove
1/2 cup mixed herbs (i used chives, parsley, dill, basil, thyme, tarragon)
1/2 cup extra virgin olive oil
1 lemon, juice of
3 cups beef stock or consomme
1 sweet onion or Spanish onion, chopped
1 cucumber (english style is best)
1/2-1 teaspoon paprika
additional parsley, as garnish (optional)
croutons or breadcrumbs, as garnish

Preparation
1. Quarter tomatoes and place in a blender or food processor.
2. Add chopped green pepper, coarsely chopped herbs, and pressed garlic.
3. Blend till smooth or until it reaches the consistency you prefer.
4. place in a serving bowl.
5. gradually add 1/2 cup olive oil, the juice of 1 lemon and 3 cups of chilled beef stock to the tomato mixture while stirring. (Substitute with vegetable stock for a vegetarian version.)
6. Blend the onion and 1/2 of the cucumber and add to the tomatoe mixture.
7. Add the paprika and grate the remaining cucumber into the soup; add salt if you like or allow people to add salt at the table.
8. Garnish with parsley and croutons.

Weight Watchers Snickers Candy Bar recipe
Makes 96 servings

Ingredients

Bottom Layer
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup creamy peanut butter

Filling
1/4 cup butter
1 cup sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow creme
1/4 cup creamy peanut butter
1 teaspoon vanilla extract
1 1/2 cups chopped salted peanuts

Caramel Layer
1 (14 ounce) package caramels
1/4 cup whipping cream

Icing
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup creamy peanut butter

Preparation
1. Combine the first three ingredients in a small saucepan.
2. Stir over low heat until melted and smooth.
3. Spread into bottom of lightly greased 9×13 pan.
4. Refrigerate until set (or put in deep freezer for about 20 minutes).
5. For filling, melt butter in a heavy saucepan over medium-high heat.
6. Add sugar and milk.
7. Bring to boil, boil and stir for 5 minutes.
8. Remove from the heat and stir in marshmallow creme, peanut butter and vanilla.
9. Add peanuts.
10. Spread over first layer.
11. Refrigerate until set.
12. Combine caramels and cream in saucepan, stir over low heat until melted and smooth.
13. Spread over filling layer and refrigerate until set.
14. In another saucepan combine chips and peanut butter, stir over low heat until melted and smooth.
15. Pour over caramel layer.
16. Refrigerate at least one hour (I usually do much longer before cutting).
17. Cut into 1 inch squares.
18. Store in airtight container in refrigerator (will keep a long time).

6. Bake at 350′ for 40 minutes.
